Slow, healthy, and
No Wasting concept. 

Our concept an so the menu are inspired by the traditional food culture of Sardinia, celebrated for its authenticity, simplicity, and natural health benefits.

We use only fresh, seasonal ingredients, prepared with care

and respect for the land.

 

Cooking is done exclusively with natural fats like homemade beef tallow, homemade pork lard, butter, and exclusively Italian extra virgin olive oil—never industrial seed oils.

These time-honored ingredients enhance flavor and reflect the way our ancestors nourished themselves for generations.

 

We offer a selection of authentic Sardinian recipes, including handmade pastas, slow-cooked meats, and fish.

Our menu changes frequently, following the rhythm of the seasons and the availability of local ingredients

—ensuring every dish is fresh, relevant, and deeply rooted in tradition.

We also want those who frequent our restaurant to know that our cuisine and our way of preparing and cooking food is absolutely against waste, in our country they say “nothing is thrown away” and we literally don’t throw anything away. For example, all vegetable and bone scraps are used to prepare Demi-glacé sauce, used as a base to prepare well-known sauces such as ragù 'alla bolognese', a way to enrich our dishes with flavor.

Traditional Sourdough

Our sourdough bread is distinguished by its use of a 10-year-old mother yeast, carefully cultivated from Sardinia. This ancient yeast is lovingly tended to each day, ensuring its vitality and authenticity in every loaf. We adhere faithfully to the traditional Sardinian recipe known as Civraxiu, ensuring our bread not only delights the palate but also honors centuries of baking tradition.
